For our 10 year wedding anniversary, Iradel and I took a trip to Universal Studios in Orlando, FL! We had so much fun!! I don't think we have laughed that much in a long time. LOL!
My personal review of the entire trip is I'm glad we decided to stay at a resort hotel within the parks because everything was so quick and easily accessible. Our hotel was wonderful. Great customer service. Not a lot of kids (no offense to those with children -- it was just a nice perk for us since we were going for anniversary purposes -- LOL). Of course, we did go during the week and it was in September -- most kids are in school. We also used our AAA benefits which allotted us some great deals on food, park admissions, and more!
I'm not going to include all the pictures from the parks but basically Universal had like 3 major parks. We mainly visited 2. The 3rd was a water park that we just didn't have time to get to. We did the 3D rides, e.g. Spiderman, one of the Harry Potter rides, Transformers, etc. We visited some of the restaurants and just enjoyed our stay. We do plan to go again! This was definitely a place that you could take family or just make it a trip for two! :-)
For those that do not know, in 2016, I discovered I had multiple food allergies. This included wheat, egg, soy, dairy -- to just name a few. In the last 2 years, I have enjoyed the adventure of finding meals that are quick while yet still incorporating those meals that are created from fresh veggies, poultry, and fish.
Yes -- I still eat chicken, turkey, and certain fish. I recently had to stop beef and pork -- the pork break-up is still a little tender so I'm taking it one day at time.
About a couple of months ago, while grocery shopping I discovered these pasta kits. At first I only saw the mac and cheese version. I actually liked it. I will admit I had to add a little pinch (and I do mean little) of sweetener to it (Stevia). Just to ensure my taste buds were fooled into believing it was real cheddar. LOL! Then I saw the others for Alfredo and the veggie like mix. I've tried all three from Daiya and I have enjoyed them all! For the others, I didn't have to add no sweetener! Also, I do add a little almond milk to help with creaminess -- maybe cashew milk would work too.
For the Alfredo and veggie, I add chicken breast that I either boil or cook up in a pan with light oil. I've even added steamed broccoli to the Alfredo!
I'm probably late with this tip but hey, those that may not know these are out there: CHECK THEM OUT!! I get them from my local Meijer store and I'm pretty they're available in other major grocery stores too!

Many people may know (or may not know) I have a lot food allergies. I discovered these in November 2016. Since around August of 2016, I had stopped eating bread and fast-foods. It's been a heck of a journey but it's been worth it! I explain it more in my video blog so check it out!
Now, holidays are still a challenge for me! I must try to discover how to enjoy food without causing issues for me. And one of my many talents is baking -- and sugar causes issues for me along with dairy and gluten. So, I strive to look for ways that won't cause me to have to add sugar because I recognize that sugar is EVERYWHERE! LOL! So, when I have to time to make dessert, I strive to go after simple, easy, and not a lot of ingredients. This one is of the first simple desserts I've tried since my food allergy discovery. I have bought desserts and all that. Some were a huge fail and others were satisfactory. I was inspired by a similar recipe where you make your own whipped cream and all that. But like I said, I just wanted to go for something very simple! In fact, I used an 8x8 glass dish versus the longer one used in the similar recipe. But I believe prep and timing are exactly the same (if not a little less). I am no 'cook' -- so here's the details of what I used:
I finished reading ‘Why Jesus? Rediscovering His Truth in an Age of Mass Marketed Spirituality’ a little over a month ago. I wasn’t sure what to expect. I discovered this book when I first started Masters in Divinity (MDiv) classes with Regent University. I love this university, by the way! This book turned out to be a great addition to the ‘spiritual tillage tools’ that I have gathered for this journey as a seminary student.
In my opinion, the author (Ravi Zacharias) does an incredible job illustrating how marketed spirituality has blinded so many people from the Christian truth of Jesus Christ. He does mention some note-worthy celebrities who has helped to make the idea of spirituality seem like it’s the true, authentic form of living. However, I agree with how the author illustrates these mass marketing strategies aren’t leading to the path of authentic truth in Jesus Christ.
I understand the struggle of living in a world that is full of evil, chaos, and uncertainty. To not have a sense of control over your life is scary. However, formulating a falsehood of individually that isolates people doesn’t make the fear and evil go away. We are all create in God’s image (Gen. 1:27) and to separate self from God is impossible. Having a personal relationship with God is necessary to find truth for life. Life on earth was never meant to be full of peace and tranquility. That’s not what God promises. Often people try to find peace, wholeness, and fulfillment by rejecting God because it’s too much evil happening in the world. As though to say if there was a God, why is so much chaos happening in the world. But God cannot be viewed as an imaginary superhero who protects and rescues the world. There is a reality to life that is not pleasant but there’s no reason to blame God for this reality. Due to the ‘mass marketing spirituality’, we are lead into an imaginary world that doesn’t exist. It doesn’t provide real peace or fulfillment. Only a relationship, while recognizing reality, with God through Jesus Christ can provide real peace and fulfillment.
God is in control and He knows all that is happening. He also desires for us to live life to the best of our abilities. The Bible is meant to be our guide and it helps us to recognize how to deal with the reality of living in this world. This book is a great reminder of so many powerful, spiritual principles for living life and having a real relationship with God. I love how he discusses childlike surrender and the first evangelist being the Samaritan woman. He uses the story of the woman with the Alabaster box to discuss the “Alabaster Touch” where she knew she needed forgiveness and the price of forgiveness.
I know we hear the phrase of how salvation, grace, mercy, favor, etc. is free. But after studying these past few months, these aren’t free. There’s a price that was paid and continues to be paid. It may not be monetary or visible forms of payment. But Jesus Christ’s death on the cross is a high cost for all that we have today. And if we live, we still owe God our lives. Being a living sacrifice that is holy and acceptable (Romans 12:1-3). We can’t ‘water down’ the fact that living a Christian life isn’t difficult. We can’t ‘down play’ this journey as though we can just live however and repent later. NO! There’s a daily cost for living for God. Many people believe this type of lifestyle is impossible and comes with unrealistic or unpleasant limitations. And that’s the furthest from the truth. God never said we had to be perfect. If we are ‘living sacrifices’, He knows we aren’t perfect because we still are wrapped in flesh. When we strive to do our very best each day to please Him, then we’re doing our reasonable service. So, the holy and acceptable lifestyle is possible. And for the limitations – when we embrace the truth of Jesus Christ, there are no limits; only freedom. Those that feel limited are still allowing their flesh to control their actions versus allowing the Holy Spirit to help them learn how to control their flesh.
I recommend this book as a great way to help with seasonal tillage for spiritual growth. It helped me to answer that question for myself: Why Jesus? Why Jesus Christ for my life? As a believer, I know I must stand against much opposition when it comes to helping spread the gospel of Jesus Christ. So, I must be able to answer that question without hesitation when someone wants to know why believe in Jesus Christ for a living a life of truth.
I completed the book, “The Kingdom Life: A Practical Theology of Discipleship and Spiritual Formation” a few weeks ago. This book is absolutely a must-have for anyone who is a Christian! I would try to say for those who are pastoring or ministering but nope! LOL! Anyone who is a Christian need to read this book. It will help you with some in-depth ‘spiritual tillage’ for your life.
I honestly don’t know where to begin with this book because it has so much rich information and spiritual insight. It’s a book collaboration of several people who are a part of TACT group (Theological and Cultural Thinkers). The book is divided into two parts: the process elements of spiritual formation and the theological elements of spiritual formation. I think the biggest underlying message I loved about this book is the fact that spiritual formation is a lifelong journey.
I know when I first was introduced to Christianity, I was under the impression that life wouldn’t be so difficult. I knew I would still face obstacles and they could come to test my faith. But I kept thinking that I had to reach this certain spiritual pinnacle and I quickly learned that was not true. True transformation and formation takes a lifetime. I will never reach perfection, but I can reach great levels of maturity. Not to become haughty or prideful but to help continue to enlarge the Kingdom of God the way He intends.
This book checked me when it came to clarify spiritual disciplines. I will admit that because I was lead to believe that I earned ‘brownie points’ when I would pray a certain way, fast, lay prostrate for meditation, etc. No! These, along with plenty more, spiritual disciplines are not earning my way into greater favor with God. They help the continued spiritual formation, so I can mature and align my life with His Will. Just because I follow certain spiritual disciplines doesn’t mean I automatically should receive everything I want. And I think that’s where many people end up getting hurt by God because they though being a ‘good Christian’ will stop the really bad stuff from happening.
I know when we lost Charlotte to stillbirth, I really had to work on trusting God again. Because I just knew because we prayed, fasted, tithe, went to church, prayed for other people, etc. that nothing bad could possibly happen during our pregnancy. However, little did I know, it was really meant to prepare me to overcome that obstacle and be a testimony for others. Spiritual disciplines don’t necessarily change the course of God’s Will, but it can help you get ready to change for His Will. God does answer prayers, but the answers are according to His Will and timing. It’s easy to accept this truth when all is going well and nothing major is plucking her your heart strings. But then when something happens like the unexpected death of a child, you begin to wonder about what God is really trying to prove.
Therefore, spiritual disciplines are important to practice for the sake of growth and maturity not for the sake of looking good or being considered ‘holier’ than the rest. God doesn’t favor one person over another (Romans 2:11) because of someone practicing certain disciplines all the time. Real favor happens when we trust Him! Real breakthrough happens when we love Him and truly forgive others! Real blessings happen when we begin to produce the fruits of the spirit!
I recommend this book because it’s a great book to use for study time; personal or group. It has reflection questions at the end of each chapter, so it allows for engagement and application.
OMG!!! Attention ALL ladies!! I challenge ALL ladies to get this book! Working with Tiffany to birth this book was an incredible and humbling experience. God knows this lady is special. Her heart to help others is so pure and genuine!
This book is not just for the 'phat girl' but it's truly for all women! We all have struggles with the society's standard of beauty. We've struggled with being teased and trying our best to remain confident when really, we are disappointed. But Tiffany helps us realize this disappointment was not purposed by God! God made no mistakes and we are all wonderfully made by His divine purpose!

I met this young lady via my husband several years ago. We sung for our wedding. Her voice is so anointed! I remember when she came to me for help to publish this book, I said I would do my best to help her birth it based on her deadline. And literally about 30 days, she had books ready for sell!

This book is for any woman who desires to understand how God can still work things out for our good! How God is capable to protect and guide you through every relationship in your life. This is truly a wonderful book! We ladies often will experience so many different dynamics of emotions in relationship that we do get a little blindsided and misunderstand what God is saying initially. However, as with everything in life, God teaches us through experience. Each relationship has a lesson. Once the relationship is ended, we must take the time to really hear what God says because I guarantee there is a lesson in there somewhere!
